Zucchini Noodle Salad
Ingredients:
Whisk oil, vinegar, basil, garlic powder, salt and pepper in a large bowl to make a dressing. Using a spiral vegetable slicer, “spiralize” zucchini lengthwise into noodles. Add the zucchini noodles to the bowl with oil, vinegar, basil, garlic powder, salt and pepper. Add in mozzarella balls, cherry tomatoes and avocado. Toss to coat. Serve topped with more basil, if desired. Enjoy!
